Chinese Chicken Salad
- 1 package ramen noodles, any flavor, noodles only
- 2 tablespoons Asian sesame dressing, plus additional for salad
- 6 ounce package salad greens
- 1 can mandarin orange segments, drained and rinsed well
- 9 ounce package cooked chicken strips (or equivalent)
- 3 tablespoons dried cranberries
- 3 tablespoons thin chow mein noodles
Everybody ate every bite of this salad, including Shae, so I didn't get pictures. But I assure you it was as pretty as it was tasty. The red lettuce in the blend we used matched the dried cranberries and the orange was a nice pop of color and ... it was yummy. We'll definitely eat this one again.
For reference, we used the following brands: Maruchan ramen, Oriental flavor; Kraft light Asian toasted sesame salad dressing; Dole Seven Lettuces salad blend; Great Value mandarin oranges in light syrup, 11 oz. can, rinsed and drained twice; Perdue Short Cuts carved chicken breast, original roasted flavor; Great Value dried cranberries; La Choy chow mein noodles.
