12W12S Update: Week 2, Day 1

One of the unintended benefits of this project -- and yes, for now I am considering this a "self-improvement project" and not a "diet" because I need to break the link between "diet" and other filthy four-letter words -- is that I might be able to get myself back into my photo-a-day habit. Because I want to start taking pictures of my breakfasts, because breakfast foods can be really pretty, both individually and when combined into delicious things.

Today's Breakfast: Fruit, yogurt, and granola parfait, with pistachios for snack.


Ingredients: 6 oz. Wegman's blended lowfat Key lime yogurt, ½ cup Driscoll's fresh raspberries, ½ cup Cascadian Farms organic oats and honey granola, ½ cup Everybody's Nuts European roast pistachios.

Caveats: I got the organic granola because it was the only kind I could find that did not have almonds in it and/or did not cost $8.99/lb. I love granola, but I am not a FOOL. Also, I could not find the unsalted roasted pistachios, which are my preference; I went with this flavor because it intrigued me. They taste like ... roasted pistachios.

Ruling: This flavor of yogurt was so good that I literally licked the lid clean. I am generally afraid of "fancy" flavored yogurts, but this one was good and I'll definitely eat it again. I don't normally like plain, unsweetened berries, but Shae picked these out at the store the other day, and I don't want them to go bad. They are quite tart, but delicious in this combo, and I'd eat it again. The granola is granola-y, perfectly fine for this application. And I love me some pistachios, so I can't complain there.

"Recipe": To make the parfait, I put half the yogurt in a cup, then added half the berries, then half the granola. Repeat. I took a picture before I blended everything together, but I ate this all mashed up into basically a crunchy mess. It was very good.
